Tonight we stayed in for dinner and a movie. On the menu was raspberry chipotle chicken and a fruited slaw with a raspberry chipotle vinegarette. For our movie selection, we watched Disney’s “Tron”. This was an evening enjoyed by all the family. That is a challenge when you have kids ages 9, 12, and 15. This dish is spicy, but not too spicy. If you do not have the raspberry chipotle bbq sauce, you can use raspberry jam, garlic powder, smoked paprika, cayenne pepper, and a splash of lemon juice.
Raspberry Chipotle Chicken
4-5 lbs. chicken, favorite pieces
salt and pepper to taste
1/4 c. raspberry chipotle bbq sauce (Fisher and Weiser from Costco)
Preheat oven to 350. Place chicken pieces on a broiler pan. Bake in oven for 45 minutes. Spread bbq sauce over chicken pieces and return to oven for 15 minutes or until thermometer reads 160.
1 small red cabbage – chopped
2 stalks celery – chopped
1 apple – cored and chopped (We used a Braeburn)
2 carrots – grated
1 c. green grapes – halved
1 c. red grapes – halved
Combine in a salad bowl.
1/4 c. Raspberry Chipotle bbq sauce
2 Tbsp. apple cider vinegar
1 Tbsp. honey
2 Tbsp. water
1 tsp. honey mustard
Whisk all ingredients to combine. Pour over slaw and stir. Refrigerate and serve.
