We enjoyed the yummiest dessert last night. These biscuits were crunchy on the outside and tender on the inside. You could reduce the amount of sugar in this recipe and use them as a regular gluten-free and dairy-free biscuit. We served them with homemade coconut milk, bananas foster ice cream, strawberries, and a drizzle of homemade caramel sauce. A little indulgent…..but why not?
Gluten-Free and Dairy-Free Biscuit or Shortcake Recipe
1 c. sorghum flour
1/2 c. millet flour
1/2 c. tapioca flour
1/4 c. gluten-free oat flour
1/2 tsp. xanthan gum
1/4 c. sugar (reduce to 1 Tbsp. if making regular biscuits)
1 tsp. salt
1 tbsp. baking powder
1/2 c. Spectrum shortening- butter flavored
3/4 c. hemp milk (or use your favorite non-dairy milk)
Preheat oven to 375′. In mixing bowl, combine dry ingredients. Cut in shortening using a pastry blender or two forks. Add hemp milk and stir until combined. Drop by ice cream scoop. Flatten slightly. Bake in a preheated oven for 15 minutes or until lightly browned. Remove from tray and place on cooling rack.
Wash and slice 2 quarts of fresh strawberries. Add sugar to taste. We used 1/4 c. We also added 1 tsp. gluten-free vanilla. Set aside.
Bananas Foster Ice Cream – Non-Dairy
2 1/4 c. Coconut Milk Beverage – We used Coconut Dream
1/4 c. brown sugar – packed
1 medium banana
1/4 tsp. cinnamon
Place ingredients in blender. Blend until smooth. Pour into frozen ice cream maker container. We use a Cusinart. Follow manufacturer’s instructions.
2 tbsp. dairy-free margarine (We use Nucoa)
1 c. brown sugar
1/4 c. light corn syrup
1/3 c. water
1 tsp. vanilla
1/4. tsp salt
1/4 tsp baking soda.
Combine all ingredients except the baking soda in a saucepan. Bring to a boil for 5 minutes, stirring. Stir in baking soda and remove from heat.
Slice a biscuit. Place the bottom half on a dessert plate. Place a scoop of the bananas foster ice cream on top. Place a spoon of the strawberries over the top of the ice cream. Place the other half of the biscuit on top. Drizzle the caramel sauce over the top of the dessert. Enjoy!!! The next morning we made strawberry shortcakes with dairy-free vanilla yogurt in place of the ice cream. They were great too.
