Looking for a quick and easy dinner idea? This gluten-free beef and vegetable stir-fry is ready in less than 30 minutes and is a one dish meal. It’s a great way to get your kids to eat their vegetables.
Gluten-Free Beef and Veggie Stir-Fry
1 lb. ground beef – browned
2 c. instant brown rice
2 – 2 1/2 c. water or chicken broth
1 Tbsp. Gluten-Free soy sauce
2 Tbsp. Gluten-Free Szechuan sauce
2 tsp. garlic powder
1/4. tsp ground ginger
1 1 lb. bag of frozen stir-fry vegetables.
Brown the ground beef and drain off any excess fat. Stir in the remaining ingredients, except for the stir-fry vegetables. Cook for five minutes covered. Add the vegetables and cover. Cook for about 8 minutes or until the vegetables are cooked through and the rice is soft.
Serve and enjoy! About 6 servings.
Looking for a vegan option? Omit the beef and chicken broth. Use vegetable broth and chopped tofu instead.
