While I was trying to create a gluten-free pizza crust, I actually came up with a bonus, this great focaccia recipe. This recipe is not only gluten free but also dairy free, egg free and vegan as well. I pre-baked two pizza crusts and decided to top one with our favorite toppings and the other with olive oil, garlic salt, and Italian seasonings. I made two 9 inch pans, but it could be spread in a 9×13 pan or on a greased cookie sheet to create one large pizza. This recipe is perfect for family pizza night.

Gluten-Free, Dairy-Free, Egg-Free, and Vegan Pizza Crust and Focaccia recipe
1/2c. tapioca starch
1/2c. millet flour
1/2c. potato starch
1 1/4c. sorghum flour
1/4c. teff flour (you can use brown rice flour if you don’t have teff)
2 tsp. active dry yeast
1 tsp. xanthan gum
1 1/2 tsp. baking powder
1/2 tsp. garlic powder
1 1/2 tsp. salt
1/2 tsp. Italian seasonings
1 tbsp. honey
2 egg-replacer
1/4c. extra virgin olive oil
1c. warm water (110 degrees)

Prepare egg-replacer according to package directions. Stir in honey, olive oil, warm water, and yeast. Add in remaining ingredients. Stir until combined. Dough will be sticky. Grease cake pan for a deep dish pizza or baking sheet for a thinner pizza. Place 1/2 the dough in two 9 in. cake pans or all of the dough in a 9×13 for larger pan pizza. If using a baking sheet grease the sheet and place dough in the center. Wet hands with cold water and pat dough to spread it out. You may have to wet your hands multiple times. Let rest for 1 hour in a warm place.
Preheat oven to 400 degrees. Then pre-bake crust until golden brown, about 15-20 minutes. Then remove from oven. If you are creating focaccia, drizzle with olive oil and sprinkle with sea salt. Return to the oven for another 15 minutes or until done. If making pizza, top with your favorite sauce and other toppings. Return to oven and bake another 15 minutes or until done.
Remove from oven, slice and serve.
