This is a quick and easy Easter treat that everyone can enjoy. It is very difficult to find safe chocolate Easter treats for anyone with allergies, unless you order online. Here is a recipe for SunButter Cups that taste so close to the real thing that everyone will love them. Be sure to save one or two for yourself.

10 – 12 oz. Dairy-Free Chocolate Chips (Enjoy Life Foods is free from the top 8 allergens. We used Ghirardelli Semi-Sweet, they are Kosher-D, which means that they are run on the same line. If you are highly allergic do not use these! They do not list any dairy ingredients. There are other chocolate chips like Tropical source and Guittard. Use what you like best.)
1 Tbsp. Spectrum Organic Butter Flavored Shortening
Small foil candy cups
In microwave safe bowl or in the top of a double boiler, melt chocolate chips. Only cook for 30 seconds at a time in the microwave, so you do not over cook your chocolate. Stir in shortening. With a small spoon, place a spoonful of chocolate in 12 foil candy cups. Spread it all around to cover the cup, but let some pool in the bottom. Spoon in a about 1/2-3/4 tsp. SunButter in each cup. Then cover with chocolate. We made 12 with this recipe. Place in the fridge until set, about 15-30 minutes Remove candy from foil and enjoy!!! These will bless your loved ones on Easter morning. There is nothing better than to find safe chocolate treats in your Easter basket.
