Applesauce Snack Cake- Gluten-Free, Dairy-Free, Egg-Free, Nut-Free and Vegan
1 Betty Crocker Gluten-Free Yellow Cake Mix
2 Tbsp. Flax Meal
6 Tbsp. Hot Water
1/2 c. Spectrum Organic Shortening Butter Flavored
2 tsp. GF vanilla
1/2 c. applesauce
1/2 c. water
1 tsp. cinnamon
1/4 tsp. ground nutmeg
1/4 tsp. ground cloves
Preheat oven to 350. Grease the bottom of an 8×8 in. pan. You can use muffin papers to make 12 cupcakes. Combine the flax meal and hot water in a large mixing bowl. Let it sit for a few minutes to gel. Then add all of the remaining ingredients. Mix on medium speed until well combined. Then mix on high for two minutes. Pour into greased pan. Bake 50-60 minutes (15-20 for cupcakes). The top of the cake cracks slightly when done. Cool, cut and serve. This cake can also be dusted with GF powdered sugar or frosted. Enjoy!!!
