Let this quick and easy, healthy breakfast get you going in the morning. The sweetness from the dried cranberries is enough to satisfy, so you don’t have to add any extra sweetener. Heart healthy cinnamon and ginger are the finishing touches that make this breakfast a treat.
Cranberry Ginger Oatmeal – Gluten-Free, Dairy-Free, Nut-Free and Vegan
2 c. water
1/4 tsp. salt
1 c. Gluten-Free Rolled Oats
1 tsp. cinnamon
1/2 fresh grated ginger (if using dry, I wouldn’t even use 1/8 of tsp.)
Bring water and salt to boil. Stir in oats and reduce heat to simmer until cooked (about 8 minutes). Remove from heat and stir in cinnamon, ginger and dried cranberries. Scoop into serving bowls and top with your favorite non-dairy milk. Enjoy!!!
