These are monster cookies minus the peanut butter (I used SunButter) and the candy coated chocolate pieces. If anyone knows of good non-dairy candy coated chocolate pieces, please let me know. Kids of all ages will enjoy this yummy cookie. I scooped mine with a large scoop and then placed non-dairy ice cream in between two of them to make a giant ice cream sandwich.
SunButter Monster Cookie Ice-Cream Sandwich – Gluten- Free, Dairy-Free, Egg- Free and Vegan
1 Tbsp. Ground Flax meal
5 Tbsp. Hot water
1/2 c. Spectrum Organic Butter Flavored Shortening
1/2 c SunButter
1 tsp. GF Vanilla
1 box Betty Crocker Gluten Free Chocolate Chip Cookie Mix
1 c. Crisp Rice Cereal (Nature’s Path) or your favorite GF Crisp Rice
Preheat oven to 350*. In large bowl combine flax meal and hot water. Let sit for a couple of minutes to gel. Add shortening, SunButter and vanilla. Whip until fluffy. Stir in cookie mix and crisp rice. Scoop onto ungreased cookie sheets. I used my large scoop and it made 13 large cookies. It would make about 2 dozen with a small scoop. Enjoy!!!
To make ice cream sandwiches:
Soften your favorite non-dairy ice cream. I used vanilla Rice Dream. It is gluten-free and dairy-free. Place one cookie upside down on a plate. Place a scoop of softened ice-cream on top of the cookie and place a 2nd cookie right side up on top of the ice cream. They can be served immediately or wrapped in plastic wrap and placed in the freezer.
