This cake is free from the usual potato starch or tapioca starch used in a lot of gluten-free baking. This recipe is also dairy free, egg free, nut free and vegan. It can be frosted with your favorite frosting and enjoyed by all. It has the flavor and texture of a regular carrot cake without the gluten, dairy and eggs. Carrot Cake with Pineapple – Gluten-Free, Dairy-Free, Egg-Free, Nut-Free and Vegan
1 Tbsp. flax meal + 2 Tbsp. hot water
1 20 oz. can of crushed pineapple-(Well Drained) Save Juice!!!
2 c. grated carrots
1/2 c. oil (I used corn oil, but any other light tasting oil will work)
1 tsp. GF vanilla
1 c. brown sugar
1 1/2 c. sorghum flour
1/4 c. amaranth flour
1/2 c. millet flour
2 tsp. baking powder
1 tsp. baking soda
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. nutmeg
1 tsp. xanthan gum
1 Tbsp. rice vinegar
1/4 c. water
1/4 c. pineapple juice

Preheat oven to 350*. Use two 9 in. round pans. Line the bottom with parchment paper. Do not grease the sides. If you do not have parchment paper then only grease the bottoms of the pans.
In large of mixer bowl add flax meal and hot water. Let it sit for a couple of minutes to gel. Then add remaining ingredients. Mix on medium speed for about 2 minutes. Pour evenly into prepared pans. Bake for 25-30 minutes or until golden brown and a tooth pick inserted in the center comes out clean. Set on cooling racks. Cool for about 10 minutes, then remove from pans and remove parchment paper. Cool completely on cooling rack. Place one cake on plate flat side up. Spread with frosting and then place 2nd cake on top flat side up. Frost the rest of the cake. Garnish if desired. Serve and enjoy!!!
