This is one of those go to dishes when you need some comfort food. This can be served as a main or side dish. This is a macaroni and cheese that everyone can eat and enjoy. It is nice enough to serve when you have company. You can use your favorite gluten-free pasta. I used brown rice pasta. It is our personal favorite. You can also choose your favorite cheese to use in this recipe as well. I used 100% goat cheddar. Best Macaroni and Cheese – Gluten-Free and Dairy-Free
1 lb. bag Brown Rice Pasta (Can use other GF pasta)
2 tsp. salt
2 Tbsp. oil (I used extra virgin olive oil)
2 Tbsp. sorghum flour
1 1/2 c. GF chicken broth (Veggie Broth or non-dairy milk can be used)
1 1/2 c. goat cheddar (can use non-dairy cheese)
garlic pepper seasoning to taste
In a large pot bring 4qts. of water to boil. Add 2 tsp. salt. Add pasta and cook according to package directions. Drain.
In a medium pot add 2 Tbsp. olive oil and 2 Tbsp. sorghum flour. Stir and cook for about 2 minutes. Add chicken broth or non-dairy milk and stir. Cook until it starts to thicken. Stir in cheese. Fold in cooked and drained pasta. Season to taste. Serve and enjoy!!!
Serves 4-6 as main dish, 8 as a side dish.
