Happy Birthday to my son Ethan who turned 13 today. He placed his birthday breakfast order last night, so I was up at 5am to enjoy a cup of coffee, the sunrise and the peace and quiet. Then I got started making gluten-free, dairy-free, nut-free and vegan waffles. I made a fresh peach cinnamon syrup and nitrate free bacon. I also made whole wheat waffles for the rest of the family. It was a yummy way to start this day. One of the hottest days of the year here on the Palouse. A little later after the breakfast dishes were all cleaned up, Ethan joined me in the kitchen to make his birthday cake. He requested my gluten-free, dairy-free, nut-free and vegan carrot-pineapple cake. I had him help me make this cake so that he will eventually learn how to make it on his own. He loves to bake. Maybe someday we will have our bakery that serves gluten-free, dairy-free, egg-free, nut-free and vegan delights. I keep thinking that someday in Moscow, Idaho we will open a cute little shop that offers breakfast and lunch. We will have to wait and see what happens. Tonight we will BBQ with friends and say that it has been a great day and count our blessings.
My thoughts and prayers go out to all of the people on the East Coast in the path of hurricane Irene. I pray for their safety and peace in this time of trouble.
