Quick and Easy Gluten Free, Dairy Free, Egg Free, Nut Free and Vegan Brownies
2 Tbsp flax meal + 6 Tbsp hot water
2 c. Gluten Free all-purpose flour mix (I use my own brown rice, sorghum based mix)
2 tsp vanilla
1/2 c. cocoa powder (I LOVE Trader Joe’s)
1 c. almond/coconut milk (or you favorite dairy alternative)
1/2 – 1c. sugar (I used 1/2c. natural pure cane sugar. You might want to add more to taste. These are not very sweet, more like a chocolate muffin.)
In a small bowl combine the flax meal and hot water and set aside for a few minutes to gel. This creates a great egg replacer.
Preheat oven to 325. In a large bowl combine all ingredients until well mixed.and then pour into a 8×8 baking pan with the bottom greased. Bake for 20-30 minutes or until a tooth pick inserted into the center comes out clean. Cool and then cut. Enjoy with your favorite cup of coffee or tea.
