This gluten free sauerkraut salad is what I will be contributing to a funeral luncheon tomorrow after we lay to rest a pillar of our community. Tom Byers was the kind of man that would help anyone if he could. He will be greatly missed. Our church will be hosting a large luncheon in his honor after the service. The town of Endicott, WA is a Volga German settlement and in celebration of this heritage I am preparing this gluten free sauerkraut salad. I have a quart of homemade sauerkraut, that I made a couple of months ago. If you don’t have homemade, then using a jar of sauerkraut from the store will be just fine. I hope that you will make this gluten free sauerkraut salad soon, under happier circumstances.
Gluten Free Sauerkraut Salad
- Sauerkraut - 4 c.
- Carrot - 1 medium carrot, grated
- Onions, diced - 1 c.
- Celery, diced - 1 c.
- Green bell pepper, diced - 1 c.
- Mustard seed - 1 tsp.
- Apple Cider Vinegar - 1/2 c.
- Granulated sugar - 1 c.
- Vegetable oil - 1/3 c.
Combine all the vegetables in a salad bowl. Combine vinegar, sugar and oil in a microwave safe bowl. Heat for 2 minutes on high. Whisk until well combined and then pour over the veggies. Cover with plastic wrap and refrigerate overnight or longer. Serve chilled.
