If you have been longing for a comfort dessert, then check out this recipe for gluten free banana pudding! It is free of most allergens which makes it a great dessert for any occasion. I have wonderful memories from my childhood of my mom making and serving banana pudding for dessert. I learned to make it as a teenager and enjoyed making it, up until I was diagnosed with food allergies. Do you ever have those moments when you aren’t really sure what you want but you know you want something yummy? Last night I was having one of those moments and then it hit me! I wanted banana pudding. This morning I woke up thinking about creating gluten free, dairy free and vegan vanilla wafers. After searching the net and not finding what I was looking for we (my son Ethan and I) headed for the kitchen. Our first attempt turned out a not so crispy, but still yummy cookie. *Note- This recipe is traditionally topped with a baked egg white meringue. Feel free to add one if your allergies permit. It could also be topped with So Delicious Coco Whip or other non-dairy whipped topping. Caution- Cool Whip contains milk proteins.
