In honor of national Sneak Zucchini Onto Your Neighbor’s Porch Day, I have created the following gluten free chocolate zucchini cake recipe. Chocolate cake makes every day great! have to say that this is my family’s favorite way to eat zucchini. This cake is xanthan gum-free for those that can’t tolerate xanthan gum. It is an easy cake to put together. Plus, you can feel good that you are eating your veggies, right? Have any extra zucchini? Then get baking! We love to decorate this cake by dusting it with powdered sugar and a scoop of our favorite non-dairy frozen dessert. Feel free to frost this cake with your favorite frosting. Gluten Free Chocolate Zucchini Cake
- Sorghum flour - 1 c.
- White Rice Flour - 3/4 c.
- Tapioca starch - 1/2 c.
- GF baking powder - 1 tsp.
- Baking soda - 2 tsp.
- Cocoa powder - 1/2 c.
- Salt - 1 tsp.
- Granulated sugar - 1 c.
- Oil - 1/3 c.
- Zucchini, grated - 1 1/2 c.
- Sour Milk, non-dairy milk + 1 tsp. vinegar - 1 c.
- Dairy free chocolate chips - 1 c.
Preheat oven to 350*. In a large bowl combine all dry ingredients. Add oil, zucchini and sour milk, stir well. Pour into a greased pan. I used a 9×13. Sprinkle the chocolate chips over the top of the wet batter. Bake for 15-20 minutes. The top will be firm to the touch when done. Cool completely on a cooling rack. Sprinkle lightly with powdered sugar. Serve with your favorite frozen dessert. We really like the Vanilla Rice Dream. Enjoy!
